Fried green tomato burgers


    Fried Green Tomatoes
  • Vegetable oil, for frying
  • 2 large green tomatoes cut into 1/2-inch thick slices
  • Salt and pepper
  • 1 cup buttermilk
  • 1 cup Panko breadcrumbs
  • 1 cup all-purpose flour
  • 8 slices bacon, cooked
  • 4 Brioche rolls, split and toasted
  • Red tomato slices 1/4 inch thick
  • chopped romaine lettuce
    Preparation for the fried green tomatoes:
  • In a medium nonstick skillet, pour the oil to a depth of 1/4-inch.
  • Sprinkle the tomatoes with salt. Soak in the buttermilk. In a small bowl, combine the breadcrumbs, flour and salt/pepper. Dip both sides of each green tomato slice in the flour mixture. Add the green tomatoes to the hot oil and cook until golden brown, 3 to 4 minutes per side. Preparation to assemble the burgers:
  • Place 2 slices bacon, lettuce and red tomato on the bottom halves of each brioche roll, top with the fried green tomato slice and the desired amount of chipotle mayo sauce. Cover with the brioche roll tops. Serve immediately.

    Spicy chipotle mayo Sauce:
  • 1 1/2 cups mayonnaise
  • 1/4 cup of marinated, ground chipotle pepper paste
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Mix all ingredients in a bowl and refrigerate for 1 hour
