Chocolate Espresso Mousse Parfait from the Chopping Block

8 ounces semi or bittersweet chocolate

  • 4 tablespoons unsalted butter
  • 5 eggs, separated
  • 1/4 cup brewed espresso
  • 6 tablespoons sugar
  • 3/4 cup heavy whipping cream, whipped until soft peaks form
  • Raspberries for garnish
  • Place the chocolate and butter in a double boiler or bowl set over barely simmering water, and allow to melt, stirring until smooth. Whisk in the egg yolks one at a time, and then add the coffee.

    Beat the egg whites until foamy, then gradually add the sugar. Continue whipping until the whites form shiny soft peaks.

    Gently fold the whites into the chocolate mixture. Fold in the whipped cream. Pipe into either wine or martini glasses and allow to chill for 2 hours.
