The calendar, at least says spring is here, and it will soon be time for all those springtime celebrations and family get-togethers. Cookbook author Connie Fairbanks suggests that you celebrate by making a brunch. However, Connie points out, one of the biggest dilemmas of brunches keeping your family and guests grazing, while you flip the pancakes and fry the bacon. The author of Scratch That: Seasonal Menus and Perfect Pairings, Connie demonstrates how to make some delicious and healthy beginnings for your next brunch celebration. She shares her recipes for Fruit Smoothies and Granola Parfaits; Manchego, Quince, and Arugula Skewers, and Carmel Dip with Crème Fraiche and Lime Juice served with Spring Vegetables.Connie has had several careers in her lifetime: she was in sales management in specialty retailing; worked in sales and marketing for a pharmaceutical company, and started a medical device company in Boston. In 1998, she left a successful business career that spanned over 20 years in international marketing and sales in Kansas City, Milwaukee, Omaha, Cincinnati, and Europe to pursue her dream as an actor. Since then she has used her talents to be featured in commercials and collaborate on-stage in the thriving theatre scene in Chicago. And, now, as cookbook author and home chef, she's in another role that she loves. Her advice to the home chef reflects it all: have fun, plan ahead, experiment, and make it from scratch!
