Spiced Pecan Sandwiches

Blue Plate Recipes for Wine, Women & Shoes 2009 from Chef Thaddeus Barton (Yields 8 servings) Ingredients:
  • Large Pecan Halves (2 pecans per sandwich)
  • ¼ tspn. Cayenne Pepper
  • ½ tspn. Cracked Black pepper
  • 1 tbsp. Corn Syrup
  • 1 oz. Maytag Blue cheese
  • 8 Chives (blanched)
  • Parchment Paper
  • Salt to taste
  • Preparation:

    For the pecans:

    In a small mixing bowl, toss the pecans with the corn syrup, cayenne and black pepper and salt

    Spread onto parchment paper lined baking tray and bake at 350 degrees until golden brown (about 5 minutes)

    Assembly:

    Place a small amount of blue cheese in between two of the pecan halves Tie the "sandwich" together with one chive

    Cut off any excess chive at the knot
