Recipe: Chocolate-covered Cherry Cookies
1 1/2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1/2 cup (1 stick) butter (softened)
1 cup sugar
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1 large egg
1 1/2 tsp vanilla
1 6oz package chocolate chips
1/2 cup sweetened condensed milk
1 jar maraschino cherries (reserve the juice)
Melt the chocolate chips and sweetened condensed milk over low heat. Stir in about 5 teaspoons of the cherry juice more or less to taste.
Cookies: Combine flour and cocoa powder. Cream butter then add sugar, salt, baking powder, and baking soda. Mix well. Add egg and vanilla to butter mixture. Mix well. Slowly add flour and cocoa. Shape the dough into 1-inch balls and place on ungreased cookie sheet. Make an indentation in the center of each ball and place a cherry in each one. Cover each cherry with the chocolate sauce mixture. Bake at 350 for 10 minutes.
