Recipe for Tomato Poblano Sauce

Prep time: 10 minutes
Cook time: 25 minutes
Serves: 2

Ingredients:

1-1/2 Tablespoons olive oil
2 poblano chilies, seeded and diced
1/2 cup diced onion
2 cloves garlic, minced
1 15 oz can Marinara sauce
3 Tablespoons fresh basil, chopped
Hot sauce to taste

Preparation:

1. In a saucepan over moderate heat, sauté poblano chilies and onions in olive oil until soft. Stirring frequently (about 10 minutes).

2. Add garlic and cook for another minute.

3. Add Marinara sauce and simmer for 15 minutes covered over low heat. Add water if the mixture becomes too thick.

4. Add basil and hot sauce to taste. Serve with your favorite hot pasta.
