Grannie Annie's "Spank My Bottom" Peach Cobbler
(If it Ain't Good, You Can Spank My Bottom)
Preheat oven at 350 degrees

Crust:
(If you cheat with frozen crust, my grandmother will rise from her grave and "go upside your head")
  • 2 C. Flour
  • 1 C. Crisco
  • 1 Tsp. salt
  • 8 - 10 Tbs. Ice Water

  1. Mix all dry ingredients together
  2. Add ice water and mix well with a fork
  3. When the dough is fully mix together, roll into 2 equal size balls
  4. Roll out one ball thin on a floured pastry board
Filling
  • 2 Large Cans of Peaches (use the Juice of one can)
  • 1 Stick of Butter (never use margarine)
  • 1 1/2 cup of sugar
  • 3 Tbs of Flour
  • 2 Tsp of Nutmeg
  1. Place in the bottom of a 9X12 inch baking pan, add peaches and sprinkle with sugar. Sprinkle with flour, then nutmeg. Slice butter and evenly disperse all over.
  2. Roll out the 2nd ball thin on a floured pastry board and cut into strips. Add strips to the top of the filling. Reduce oven to 275 degrees and bake slowing for 2 hours (must be baked slowing to ensure the bottom crust will not burn.
Enjoy (may serve with vanilla Ice Cream only)
