Papa's Favorite Peanut Butter and Chocolate Chip Cookies

One of my favorite past times at Christmas and all the year through is baking," she said. "This recipe is dear to my heart because it is a favorite of my father, who is lovingly referred to as "Papa" by his 8 grandchildren. Although this started as a holiday cookie, it is a wonderful cookie that can be made all year. I have and 8 year old girl, and triplet 5 year old girls, and they all help when we make "Papa's favorites". Everyone has a job to do, and the favorite is putting in the brown sugar. The cookies are a tender, mouth-watering peanut butter and chocolate sensation. Rich and tender, the cookies literally melt in your mouth! Although simple in its ingredients and preparation, take one taste and these cookies are sure to be your favorites too! Try it and I am sure you will agree! Right Papa?"

1 cup shortening/margarine
1 cup peanut butter
1 cup brown sugar
1 cup white sugar
2 eggs
2 1/4 cups flour
1 tsp baking soda
1 tsp salt
12 oz good-quality, semi-sweet chocolate chips
powder sugar for dusting

Preheat oven to 350 degrees. Combine flour, baking soda and salt. Set aside. Cream shortening, sugars, and peanut butter until light and fluffy. Add eggs and mix well. Add flour mixture gradually until all mixed in. Add chocolate chips and stir to incorporate. Drop by teaspoonfuls onto cookie sheet. Bake at 350 for 10-12 minutes or until light golden brown. Let sit on sheet for 2 minutes, then remove to sheet of foil until completely cool. Dust with powder sugar. Eat and enjoy!
