Fava bean dip

Serves 8-10

1 cup extra virgin olive oil
1 onion, grated
2 tablespoons minced garlic
1 lb dried split fava beans
6 ½ cups of water
2 tablespoons ground cumin
1 tablespoons of smoked paprika
Salt and pepper to taste
Extra virgin olive oil and bread to serve

Heat half the oil in a large saucepan, and fry the onion, garlic and fava beans until the onion is soft. Add 3 cups of the water and simmer for 30 minutes until the beans are tender, adding more water as needed.

Add the cumin and paprika and blend in a food processor until smooth. Season to taste and drizzle with extra virgin olive oil before serving.

Note: Canned fava beans can be substituted. You may have to adjust the water needed for the recipe.
