BRUSCHETTA (Grilled Bread with Olive Oil)

Traditionally, the first pressing of the olive harvest is tasted and drizzled over grilled bread. Olives are harvested in the first, second and third weeks of November.Ingredients
  • One half loaf Bread, Country Italian (Calabrese or Paesano)
  • 4 Garlic; Cloves; Peeled; Whole
  • To Taste Oil; Extra Virgin; (Novello)


    Cut bread into half inch slices. Grill bread over a charcoal or wood until a deep golden color forms. It is fine if the color becomes dark on the edges. In fact, uneven grilling is preferred. Remove the bread from the grill and immediately begin to rub the bread with the garlic clove on both sides. Arrange the grilled bread onto a platter and drizzle the extra virgin olive oil liberally and serve at once.
