The cherry tomatoes used to make this sauce should to be vine-ripened so they are sweet. Sweet tomatoes are the key ingredient in many Italian dishes; If the tomatoes are not ripe and sweet, it is okay to add a spoonful of sugar to sweeten the tomato sauce.
In a saucepan, heat in the olive oil, garlic and basil over a high flame. The high flame will release the oils in the fresh garlic to enhance the flavors of the sauce
Add the tomato puree and cook for 15 minutes, first over on a high flame until the sauce begins to boil, then cover the pan and lower the flame to simmer the sauce for the remaining time.
This sauce can be used for all your tomato based recipes such as eggplant parmigiana, or whenever you see "Mamma Agata's Tomato Sauce" mentioned in Mamma Agata's recipe book
