- 8 oz. Fresh Smelt
- Smelt Batter (see recipe below)
- 1 oz. Tartare Sauce (see recipe below)
- Peanut Oil for frying
- 1/4 Cup Fine Cracker Meal
- Quartered Lemons for garnish
Dry Smelt on Paper Towel
Dip Smelt in Batter
Dredge in Cracker Meal
Deep Fry in Peanut Oil until Golden Brown
Garnish with Lemon Wedges
Smelt Batter
- 4 oz. All Purpose Flour
- 5 oz. Water
- 1/4 tsp. Kosher Salt
- 1/4 tsp. Ground White Pepper
Mix water with combined dry ingredients
Tartare Sauce
Yield 1 Qt.
- 1 1/2 oz. Minced Red Onion
- 3 oz. Minced Celery
- 1/3 Bunch Italian Parsley, Chopped
- 2 Cups Cornichons
- 4 fluid oz. Capers
- 1 fluid oz. Lemon Juice
- 5 Dashes Red Tabasco Sauce
- 1 Pint Mayonnaise
Process cornichons in the Robot Coupe
Place all of the above items in a large mixing bowl and add remaining ingredients
Mix by hand until evenly blended
