Apple Breakfast

Amy Hanten,"The Cooking Mom"/Cookbook author and blogger, came into our ABC7 studio to show us how to use apples for great breakfast recipes.

Amy's Recipes:-

Slow Cooker Apple Oatmeal

Ingredients:

1 cup uncooked steel-cut oats
2 apples, cut into small pieces
1 1/2 cups milk
1 1/2 cups water
2 to 3 tablespoons brown sugar
1 tablespoons butter (optional)
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon salt

Directions:

Coat inside of a 3 quart slow cooker with cooking spray or use a slow cooker liner. Dump in all ingredients. Stir well, cover, and cook on low for 7 to 8 hours. Great as is but we like to dress it up with fun toppings like extra brown sugar, vanilla yogurt, nuts, and raisins. You can double the recipe and do this in a larger slow cooker. Leftovers will keep in the refrigerator for a few days.

To reheat single servings, put about a cup of the cooked oatmeal in a microwave proof bowl. Add about 1/3 cup of milk. Microwave on high for 1 minute; stir. Continue cooking for another 30 to 60 seconds, or until hot.

Breakfast Parfait in a Jar

Ingredients:

6 to 8 ounces any flavor yogurt
1 cup fresh fruit (like berries, bananas, peaches etc)
1/2 cup granola
1 mint sprig (optional)
1 clean mason jar

Directions:

Layer granola, fresh fruit, and yogurt in a jar. Top with a little fresh fruit and a mint sprig.

Notes: Great with my Overnight Granola Recipe! You can make these ahead and keep them in fridge for a quick breakfast on the run. If you want to the granola to stay crunchy put it only on the top instead of layering.

Peanut Butter Banana Wrap

Ingredients:

1 whole wheat tortilla wrap
1 ripe banana
2 to 3 tablespoons peanut butter
1 tablespoon mini chocolate chips (optional)

Directions:

Spread a thin layer of peanut butter over the whole tortilla.
Sprinkle chocolate chips over the whole thing.
Place a banana on the bottom edge.
Carefully roll the whole thing up.
Cut in half if you like.
