Spiaggia executive chef Joseph Flamm is representing Chicago as a contestant on the new Season 15 of "Top Chef" on Bravo.
The Humboldt Park neighborhood resident made his Grandmother Mary's spaghetti with squid for us.

Calamari Pasta Recipe
5 pounds squid cleaned and sliced
4 qts. tomato puree
1oz. ground black pepper
Salt to taste
2 oz. chopped parsley
1/2 pound spaghetti
2 oz. garlic, minced
4 oz. olive oil
2 oz. grated Parmigiano Reggiano
Heat up large pan and add olive oil and garlic over medium heat, sweat until translucent. Add squid and cook until water comes out of squid, drain water and return pan to heat. Cover with tomatoes and let simmer for two hours on low heat. Cook spaghetti in salted water and add to sauce, add parsley and top with parmesan cheese
