CHICAGO -- For 50 years, Uncle Remus Saucy Fried Chicken has been a tradition on Chicago's West Side. From the saucy fried chicken, to the roasted chicken, to the catfish and tilapia, everything is home goodness on a plate!

Uncle Remus was started by the Rickette family - and the shops are still family-owned today. They are run by the youngest of 12 children, Charmaine Rickette Alfred, and they are expanding! They opened a new location on 47th Street on the South Side and have plans to expand in the suburbs.

But the story isn't just about the great food. It's about the style which Charmaine runs her business. She has developed a workforce development model which is like no other.

About 75 percent of her employees have either been in jail or addicted or have fallen on hard times. Yet most have been around for years and have stayed with her because she has an innate ability to see the leadership qualities where others wouldn't even look for them. Her employees are like her family.
