BBQ Sauce Joey's Brickhouse

2 cups Rich chicken stock/broth
1/2 cup molasses
1/4 cup Rice vinegar
2 shallots
4 garlic
2 cups Ketchup
2 cups Diced tomatoes
To taste Salt and pepper at the end
1/8 cup chipotle

-brown garlic and shallot

-add all ingredients

-cook slow, 2 hours

-mix in a blender until smooth

-adjust salt & pepper

-adjust tart w/ vinegar

-adjust sweet w/ honey

-adjust spice w/ chipotle
