Super Bowl Appetizer Idea: Monsters of the Midway Chili

Even though the Bears aren't in the play-offs, Soldier Field's Executive Chef Mark Angeles is still in the game!


2 lbs Ground beef

1/4 cup Diced onion

2 tbsp Minced Garlic

3 Chipotle chiles canned in adobe

2 tbsp Cumin, ground

3 tbsp Chili powder

2 cups Tomato sauce, canned

2 cups Chili sauce

2 cups Diced tomato

2 cups Kidney beans, cooked and drained

2 cups Northern beans, cooked and drained

16 oz Beef stock

1/2 tsp Dried oregano

2 tbsp Masa harina (Corn Flour)


Render ground beef and drain fat. Return beef to pan and add garlic, onions, cumin, and chili powder. Sauté to aroma and onions are translucent. Add masa harina and combine well. Add remaining ingredients and simmer until liquid has thickened about 15 minutes. Taste and adjust seasoning as needed.
