Making chocolate sushi

The Morton Arboretum (link: http://www.mortonarb.org/) is offering a workshop on how to make "Chocolate Sushi." Marilyn Baysek, Special Events Manager at The Morton Arboretum, and Laura Valcour, owner and chef-instructor of "Chefs For A Day" (link: http://www.chefsforaday.com/) in Willowbrook, Ill., joined us in our ABC7 studio kitchen to show us how to make chocolate sushi.

Chocolate "Sushi" Recipes

Chocolate "Plastique"
Ingredients:

14 oz Bittersweet Chocolate (prefer Ghirardelli)
5 oz Light Corn Syrup

Directions:
Melt chocolate, stir in corn syrup.
Divide mixture in half, and wrap in plastic.
Allow to rest at room temperature 2-3 hours.
(If it becomes hard, allow to soften 5 seconds in the microwave and knead before using.)

Basmati Rice Pudding
Ingredients:

27 oz Coconut milk
26 oz Heavy cream
8 oz Basmati or Jasmine rice
4 oz Granulated sugar

Directions:
Combine all ingredients in a medium saucepan.
Simmer over medium heat for 30 minutes, stirring frequently, as the rice has a tendency to stick.
When pudding becomes very thick, transfer to a bowl, cover with plastic wrap and cool completely.

Marinated Fruit
3 Kiwis, chopped
2 Mangos, chopped
12 Strawberries
4 oz Meyer's Dark Rum or Gran Marnier
