Potato Croquettes

  • 2 cups mashed potatoes
  • 1/4 cup cheddar
  • 1 large egg
  • ¼ cup all-purpose flour, plus 2 tablespoons
  • Kosher salt and freshly ground pepper to taste
  • 2 tablespoons parmesan
  • 1/2 cup bread crumbs
  • 1/2 cup canola oil

Heat the oil in a saute pan over medium heat. Mix together the first six ingredients in a medium bowl. Form into 3-inch patties. Coat with bread crumbs. Brown the croquettes in the hot oil in batches. Make sure not to crowd the pan. Dry on paper towels. Serve warm.
