Cherry Yogurt Dressing

Mkes 3/4 cup or 6 (2-tablespoon) servings.

Adapted from a recipe on

1 tablespoon dried tart cherries
1 small onion
1 clove garlic
3 tablespoons fruit-flavored balsamic vinegar
1 tablespoons cherry juice -concentrate
1 tablespoon honey
2 tablespoons olive oil
1/3 cup plain or cherry non-fat Greek yogurt
Salt and pepper to taste

Directions:Chop cherries, onion and garlic in food processor; pulse until finely chopped. Add fruit-flavored vinegar, cherry juice, honey, olive oil and yogurt and mix well. Season with salt and pepper to taste.
