Low fat Egg Bake

30 oz frozen hash browns
Cooking spray
8 oz. low fat Swiss cheese
8 oz. low fat Mexican cheese blend
2 cups low sodium ham, cubed
1/3 cup green onions, chopped
1-cup egg substitute
1-cup fat free or 1% milk
¼ tsp paprika
¼ tsp salt
¼ tsp pepper

Preheat oven to 425 degrees. Defrost hash browns and drain any excess liquid. Spray 9X13 pan with cooking spray and press hash browns along the bottom of the pan and up the sides like a crust. Then, spray top of hash browns with cooking spray and bake in oven for 35 minutes. Place cheeses, ham and onions over cooked hash brown crust. Mix egg substitute, milk, paprika, salt and pepper in a bowl and pour over top of ham and cheese. Bake at 350 degrees for 40 minutes or until set in the center.

Healthy Banana Bread

½ cup unsweetened applesauce
¾ cup Splenda
½ cup egg whites or egg beaters
2 cups whole wheat flour
1 tsp. baking soda
½ tsp. salt
3 large ripe bananas, mashed
1 tsp. vanilla

Preheat oven to 350 degrees. Spray bread pan. Mix Splenda and applesauce with hand mixer.Add eggs one at a time, beating well after each addition. Combine salt, flour, and baking soda in small bowl. Gradually add dry mixture to applesauce mixture then add in bananas and vanilla. Pour mixture into pan and bake for 30-40 minutes or until toothpick comes out clean.
