Example #1 from ABC7's Phil Schwarz

Chocolate Crinkles

one-cup vegetable oil
4 squares unsweetened chocolate (melted)
-- or 3 Tblsp. cocoa and 1Tblsp. butter for each square of chocolate
2 cups sugar
4 eggs
2 tsp. vanilla
2 cups flour
2 tsp. baking powder
one-half tsp. salt
1 cup confectioner's sugar

Preheat oven to 350 degrees

Mix oil, chocolate and sugar. Blend eggs one at a time. Add vanilla. Mix flour, baking powder and salt into oil mixture. Chill several hours or overnight. Drop a teaspoon of mixture into confectioner's sugar, roll and shape into balls. Place about 2 inches apart on a greased baking sheet and bake 10-12 minutes. Do not overbake.

Example #2 from ABC7's Stacey Baca:

BACA DATE BALLS.

2 Eggs
3/4 cup Sugar
1-8oz. package Dates
1 cup Coconut
1 cup Nuts (We use pecans)
1 tsp Vanilla
1/2 tsp Almond Extract

Beat eggs and sugar together.
Blend in other ingredients.
Place in baking dish.
Bake at 350 degrees F for 30 minutes.

Let cool.
While still warm, form in to balls and cover with powdered sugar.

Eat and be happy.

Example #3 from the cousin of ABC7's Kevin Roy:

Almond Roca

Ingredients:
2 cups brown sugar
1 lb. salted butter
1 bag semi-sweet chocolate chips
1 cup chopped almonds

Tools:
candy thermometer
cookie sheet
aluminum foil
sauce pan

Directions:
1. line a cookie sheet with aluminum foil 2. heat brown sugar and butter, stirring the entire time, to 290 degrees in a sauce pan (use a candy thermometer) 3. stir 1/4 cup almonds into mixture 4. pour mixture onto cookie sheet and spread evenly 5. drop chocolate chips on mixture and let them melt 6. spread melted chocolate chips evenly across mixture 7. sprinkle 3/4 cup almonds evenly across top 8. freeze overnight 9. carefully pull candy away from aluminum foil 10. break candy into chunks

Example #4 from Mark Bishop:

Neiman Marcus Brownies

Crust:
1 box of butter pecan cake mix
1 egg
1 stick butter

Filling:
1 lb. confectioner's sugar
2 eggs
8 oz. cream cheese
1 stick butter
1/2 cup chopped pecans

Mix crust ingredients together pat into 9x13 pan. Mix filling ingredients and pour over crust. Top with pecans and bake in 300 degree oven for 50-60 minutes. Brownies will be golden brown and gooey in the middle.
