"Ten Treasures Healthy Soup" for the Chicago soul

Step aside, chicken soup. Ben Pao beefs up chicken soup with Chinese herbs, flowers and other medicinal ingredients to bring relief to stuffy, sniffly, aching Chicagoans. It's called "Ten Treasure Healthy Soup" and is based on the Chinese philosophy of yin and yang. Ingredients:


  • 1 qt chicken stock
  • 1/4 each whole natural chicken
  • 2 oz. smashed ginger

    Medicinal Reduction:

  • 1/8 oz. ginseng
  • 1 pc astralgus
  • 1pc codonopsis
  • 1pc chinese yam
  • 1/8 oz Solomon Seal
  • 1/4 oz Lily bulbs
  • 1 qt water

    48 ounce preparation

  • 1/2 cup glass noodles
  • 5 pieces lily buds
  • 1/2 c spinach leaves
  • 1 oz sliced shitake
  • 8 oz small cut soft tofu
  • cooked whole chicken pieces
  • 1/2 cup chopped napa cabbage
  • 12-15 pc goji berries
  • 4 drops kadoya sesame oil


    1. Bring to a simmer until chicken is just cooked through (approx 40 minutes)

    2. Remove chicken and set aside to cool

    3. Remove all meat and reserve

    4. strain stock and reserve

    5. add medicinal reduction and cool.


    1. Place all dry ingredients into a pot and bring to boil,

    2. Reduce heat and simmer for 2 hours or until water is reduced to 1/2 cup.

    3. Add reserved chicken stock to the medicinal reduction.

    4. Place glass noodles and lily buds in warm water to rehydrate for 15 minutes. Drain and place into pot with chiken stock.

    5. Add remaining ingredients and serve.

    Note: It is not necessary to eat the dry chinese herbs to absorb their healing powers.
