Mussels with Tomato Herbs and Pasta

During Lent, many Christians tend to eat more seafood, but it does not have to be a fried fish fillet.


2 lbs Mussels
1T Olive Oil
1/2T Garlic finely minced
1/2 Medium-Sized Onion (finely chopped)
2C Tomatoes, chopped (use can or fresh)
1C White Wine
2T Basil, chopped
1t Salt and pepper


In a large skillet or pot, heat oil over medium heat. Add garlic and onions, and cook until soft. Add tomatoes, basil, salt, pepper and wine; cook an additional 5 minutes while stirring. Add mussels, stir, then cover and allow to steam for 3 minutes until mussels open. Discard any unopened mussels, and serve over spaghetti or linguine.
