Pickled Vegetables (Side Dish)

16 oz White Wine Vinegar

8 oz Water

4 oz Sugar

1.5 oz Salt

2 tsp Mustard Seeds

0.5 tsp Red Pepper Flakes

1 tbsp Coriander Seeds

16 oz Assorted vegetables, such as asparagus, ramps, radish and fiddlehead ferns

- Bring all ingredients together in a pot, then bring to a simmer and let cool
- Transfer ingredients to glass or plastic container
- Store in a refrigerator for no more than 2 months
