- 6 large plums
- 2 c. of cider vinegar
- 1 c. of water
- 1 c. of sugar
- 1 star anise
- 1 tsp. salt
- 1/2 a vanilla bean
- 2-3 Shiso leaves (optional)
Pickling fruits and vegetables is a great way to preserve summer flavors into the fall and winter. It's easy to do and will last in your refrigerator for weeks. Also, pickled fruits and vegetables are a unique and impressive addition to a cheese or charcuterie platter for last-minute happy hour guests!
Cut the plums in half and remove the pits. Cut the halves into 4-6 slices each. Bring the remaining ingredients to a boil to dissolve the sugar. Let it cool to room temperature and pour over the plums in a large bowl. Let the plums marinate overnight. Drain and serve. If you want, you can finely chop shiso leaves and toss the plums in the chopped leaves before serving.
