Tailgating recipe: Mexican-style wings

The juicy chicken wings at Barrio Urban Taqueria are tossed in a honey chipotle sauce made with local honey and fresh chipotle peppers. Chef Martin Cabrera prepares this recipe for his family and friends at home when getting ready for gameday and will now be tossing up these favorites for football fans. Guests can choose between mild or hot and are priced at 10 wings for $7, 15 wings for $10, 20 wings for $13 (not including tax or gratuity). Barrio's Mexican-style hot wings are available Saturday through Monday during college football or NFL games.

CHICKEN WINGS AL PASTOR STYLE
RECIPE FOR 6 PEOPLE

    INGREDIENTS:
  • 1 SMALL CAN CHIPOTLE PEPPERS
  • 1 YELLOW ONION COARSELY CHOPPED
  • 1 CUP ORANGE JUICE'
  • 5 GARLIC CLOVES
  • 8 GUAJILLO CHILES
  • 1 TEASPOON GROUND CUMIN
  • 5 LBS CHICKEN WINGS
  • 1 BUNCH OF CILANTRO
  • 2 CUPS OF PINEAPPLE DICED
  • LIMES, SALT AND PEPPER

Coarsely chop 2 pineapple rounds, discarding core; cover and chill remaining pineapple. Place chopped onion and chopped pineapple in the jar of a blender. in a pot with boiling water put the guajillos for 10 min or until they become soft . take them off from the water a desteem the chiles put them in a blender and Add the remaining ingredients: orange juice, vinegar, guajillo chile, garlic, salt, oregano, cumin, chipotles, and adobo; puree marinade until smooth. Place chicken wings in large resalable plastic bag. Add marinade and seal bag, releasing excess air. Turn to coat. Chill at least 1 hour .

Pre-heat oven to 425 degrees. Line rimmed baking sheet with aluminum foil and lay a wire rack inside.

Arrange chicken wings on rack, leaving a little space between each wing brush them with the marinade . Place them in the oven and cook until deeply browned, about 45 minutes.

Garnish with the cilantro and the pineapple.
