Bite-Size Butter "Lunchroom" Cookies

"One of my life's most inspirational lessons was not taught in the classroom, but in the lunchroom," she siad. "At a very early age, I learned the importance of providing students with a well-balanced meal for optimal learning. Real live food for thought. Oftentimes, the cafeteria was the only place where some of the students would receive a complete meal. And the meal never quite seemed complete until it was topped off with a sweet treat fondly known as butter "lunchroom" cookies. Over the years I have tweaked the legendary cookie recipe, much to the delight of my family, friends, and co-workers who have enjoyed this rich treat during the Holiday Season. My latest bite-size version is made with love and sincere dedication to all those who worked behind-the-scenes motivated by the knowledge that 'All that can be learned at school cannot be done on an empty stomach.'"

Ingredients:
1 lb Butter (softened)
1 cup sugar (do not level off)
4 tbsp real vanilla extract
4 cups of flour

Preheat oven to 350 degrees

Mix in large bowl, softened butter, sugar, and vanilla using a fork.

Next add 2 cups of flour at a time to dough. Mix for about 5 minutes

After completely mixed/blended together, pinch off dough about the width of a nickel. Roll into a ball and place on cookie sheet about ½ inches apart.

Flatten each ball with fork. Bake in oven approximately 15 minutes.

Let cool, then serve. Enjoy!!!!! Store in air tight container
