Fat Rosie's Queso Fundido: Norteno

! Queso Fundido is a staple at many restaurants, but at Fat Rosie's in St. Charles, diners get to choose from three interesting and mouthwatering takes on the Mexican-style fondue.

Queso Fundido Recipe:

  • 1 cup of Chihuahua cheese
  • 1 cup of Monterrey Jack
  • Mix it, and put in a shallow baking dish (5 inch diameter) Bake in the oven at 375 for 8-10 minutes.

    Top with your favorite ingredients, and serve with warm tortillas.


  • 1/4 julienne Spanish onion
  • 1/2 julienne poblano pepper
  • 1/4 cup Mexican chorizo
  • 1 pinch dry oregano.
  • Salt and pepper to taste
  • Cook the chorizo in a medium hot pan until almost crispy. Set aside. In a different saute pan cook the pepper and the onion in low heat with a tsp of olive oil. Season with salt and pepper and cook for about 10 minutes or until the onion and pepper are very soft and tender. Add the chorizo to the vegetables, mix them all together and serve on top of the melted cheese.
