Red Velvet Cake Recipe

Nothing says Valentine's Day like Red Velvet Cake. Chef Eric Tran from Dine Restaurant and Martini Bar in Chicago shares this recipe with ABC 7.Red Velvet Cake

2 1/2 C all-purpose flour
1 1/2 C sugar
1 T cocoa powder
1 tsp baking soda
1 tsp salt
1 1/2 C vegetable oil
1 C buttermilk
2 large eggs
2 T red food coloring
1 tsp white vinegar
1 tsp vanilla extract

Preheat oven to 350 degrees. Butter or spray a 12" cake pan. (You may also use a smaller pan & use the remaining batter for cupcakes.) Set aside. Place all dry ingredients in bowl of electric mixer. Using the paddle attachment, mix on low speed until completely combined. Place all wet ingredients in separate mixing bowl. Whisk until completely combined. With mixer on medium speed, slowly pour in wet ingredients. Paddle for 2-3 minutes, until batter is completely smooth. Pour the batter into your prepared pan. Bake for 40 minutes or until cake tester comes out with few crumbs. Let cool 2 hours.

Cream Cheese Frosting

16 oz cream cheese
8 oz unsalted butter
32 oz confectioners sugar
2 tsp vanilla extract

Paddle all ingredients with electric mixer until completely smooth.
