Strawberry-Mint Relish

Makes about 3 cups

1 pound strawberries, hulled and thinly sliced
3 green onions, trimmed, sliced diagonally into 1/4" slices
1 TBL balsamic vinegar
1 TBL olive oil
1 TBL grated orange zest
1/2 bunch mint leaves, thinly sliced (about 1/2 cup)

Combine all ingredients gently in a bowl. For best results use immediately.

Serve with grilled or roasted chicken pork or seafood.
